Prawn tartelettes

Tasty meal for the whole family
Prawn tartelettes
You need

For 2 servings:

... for the dough

  • 130 g flour   
  • 80 g cold margarine
  • 1 pinch of salt
  • 1-2 tbsp cold water

... for the filling

  • 200 g Lauenroth Prawns in garlic oil
  • 1 courgette or other vegetable
  • Cherry tomatoes
  • 200 g low-fat cream
  • 1 clove of garlic (pressed through)
  • 1 tsp basil and 1 tsp thyme
  • 3 eggs
  • Juice of ½ lemon
  • salt & pepper

Preparation

  • Sieve the flour onto the worktop and make a well in the centre. Add the margarine, salt and water and knead into a dough. Then leave the dough to rest in the fridge for about ½ hour.
  • Cut the courgettes into thin slices and halve the cherry tomatoes.
  • Bring the cream to the boil and mix with the eggs, lemon juice, basil, thyme and garlic. Flavour with salt and pepper.
  • Grease the tart moulds. Roll out the pastry and cut out four Ø18 cm circles and place in the tart moulds, cutting off the overhanging edges if necessary.
  • Fill the moulds with the courgette slices and prawns and pour over the cream.
  • Garnish with the cherry tomatoes and bake in a preheated oven at 200° for approx. 20 minutes
